A good grilled chicken salad should be more than a bowl of greens with chicken placed on top. This version brings together smoky, seasoned chicken, crunchy romaine, fresh cucumbers, juicy tomatoes, creamy avocado, salty feta, and Kalamata olives.
A simple vinegar-and-herb dressing ties everything together without overwhelming the fresh ingredients. It is colorful, satisfying, and straightforward enough for a weekday lunch or an easy dinner.

Ingredients

2 — 8-ounce boneless, skinless chicken
1 teaspoon — dried oregano
1 teaspoon — ground coriander
As needed — kosher salt
As needed — freshly ground black pepper
7 tablespoons — extra-virgin olive oil
1 tablespoon — finely chopped fresh parsley
4 — romaine hearts, chopped
3 — Persian cucumbers, thinly sliced
2 — avocados, thinly sliced
1 cup — grape or cherry tomatoes, halved
½ cup — pitted Kalamata olives, halved
4 ounces — feta, crumbled
Prep time: 10 minutes
Total time: About 30 minutes
Servings: 4

Preparing the Chicken

The chicken provides the main savory element, so seasoning it well before grilling is important. Dried oregano and ground coriander give the meat a fragrant, herby character while allowing the other ingredients to remain noticeable.
Place the chicken in a bowl and season them with oregano, coriander, salt, and black pepper. Add two tablespoons of olive oil and toss until the chicken is evenly coated. Preheat a grill to medium-high heat for about five minutes. A grill pan can also be used if an outdoor grill is not available.

Instructions

1. Prepare the grill for medium-high heat and preheat it for about five minutes. Alternatively, heat a grill pan over medium-high heat.
2. Season both chicken with dried oregano, ground coriander, kosher salt, and freshly ground black pepper.
3. Add two tablespoons of olive oil and toss the chicken until it is evenly coated.
4. Place the chicken on the hot grill and cook with the grill covered, turning it halfway through.
5. Continue grilling until the chicken is lightly charred and the thickest part reaches 165°F on an instant-read thermometer, about eight minutes per side.
6. Transfer the cooked chicken to a cutting board and let it rest for about five minutes before slicing it thinly.
7. While the chicken rests, make the dressing. Whisk the chopped parsley and remaining five tablespoons of olive oil in a small bowl. Season with salt and black pepper.
8. Prepare the salad by dividing the chopped romaine, sliced cucumbers, avocado, tomatoes, Kalamata olives, and crumbled feta among serving bowls.
9. Arrange the sliced grilled chicken over the vegetables.
10. Drizzle the dressing over the salad just before serving.

Building the Salad

The ingredients work because each one contributes a different texture. Romaine provides a crisp base, while cucumbers add another layer of crunch. Tomatoes bring a juicy element, and avocado gives the salad a smooth, creamy component.
Feta adds a tangy, crumbly contrast, while Kalamata olives provide a savory note that pairs naturally with the cheese. Keeping the vegetables in relatively large, recognizable pieces also helps the finished salad feel substantial rather than overly mixed.
For the best presentation, arrange the ingredients in individual bowls or place everything on a large serving platter. Add the chicken after slicing so its grilled surface remains visible.
Grilled chicken salad becomes much more interesting when the greens are treated as just one part of the meal. Seasoned chicken, crisp vegetables, creamy avocado, feta, and olives create plenty of contrast, while the simple parsley vinaigrette brings everything together.
With a short preparation time and straightforward grilling method, this salad makes a practical option when a fresh and filling meal is wanted without complicated cooking.
