Ingredients

For the churros
- 250ml water
- 50g unsalted butter
- 150g all-purpose flour
- 2 large eggs
- 1 tablespoon granulated sugar
- 1/4 teaspoon salt
- Vegetable oil, for frying
For the cinnamon sugar
- 100g granulated sugar
- 1 teaspoon ground cinnamon
For the chocolate dipping sauce
- 150g dark chocolate, finely chopped
- 150ml heavy cream
- 1 teaspoon unsalted butter

How to Make Churros

1. Prepare the dough
Combine the water, butter, sugar, and salt in a saucepan. Heat until the butter melts and the mixture reaches a gentle boil. Remove the pan from the heat, add the flour all at once, and stir firmly until a smooth dough forms and pulls away from the sides of the pan.
Return the pan to low heat and stir the dough for 1–2 minutes to remove excess moisture. Transfer to a mixing bowl and let cool until warm, not hot. Add the eggs one at a time, mixing thoroughly after each addition until the dough is smooth, thick, and suitable for piping.
2. Prepare the cinnamon sugar
Combine the granulated sugar and ground cinnamon in a shallow bowl. Mix well and set aside until the churros are ready to be coated.
3. Shape the churros
Fit a piping bag with a large star-shaped nozzle and fill it with the dough. Pipe 10–12cm lengths onto baking paper, keeping them similar in size to promote even cooking.
4. Fry until golden
Heat the vegetable oil in a deep, heavy saucepan to 175–180°C. Carefully pipe the dough into the hot oil, cutting each length with clean kitchen scissors. Keep your hands away from the oil to prevent splashes.
Fry in small batches for approximately 3–5 minutes, turning as needed, until the churros are golden brown and cooked through. Remove them with a slotted spoon and drain on a wire rack or paper towels. Allow the oil to return to the correct temperature before frying the next batch.
5. Coat with cinnamon sugar
While the churros are still warm, roll them in the prepared cinnamon sugar until evenly coated. Set aside briefly while preparing the chocolate sauce.
6. Make the chocolate dipping sauce
Heat the cream in a small saucepan until steaming, without allowing it to boil. Remove from the heat, add the chopped chocolate and butter, and let it sit for 1 minute. Stir until smooth and glossy. If the sauce is too thick, add a little warm cream and mix until it reaches the desired consistency.

Serving Suggestions

Arrange the churros on a serving plate and pour the warm chocolate sauce into a small dipping bowl. Serve immediately to enjoy their crisp exterior and tender center.
For a variation, serve with caramel sauce or add a little extra cinnamon to the sugar coating. The chocolate sauce can also be adjusted to suit your preferred dipping consistency.

Tips for Perfect Churros

- Cool the dough before adding eggs: This prevents the eggs from cooking prematurely and helps create a smooth mixture.
- Use a star-shaped nozzle: The ridges give churros their characteristic appearance and help develop a crisp exterior.
- Maintain the oil temperature: Excessively hot oil can brown the outside before the center cooks, while cooler oil can make the churros greasy.
- Fry in small batches: Avoid overcrowding the pan to maintain a steady temperature and encourage even cooking.
- Serve immediately: Freshly prepared churros have the best texture and flavor.
