A warming homemade stew doesn't need expensive ingredients or hours of preparation. This tagine-inspired pumpkin dish combines roasted vegetables with aromatic spices, rich coconut cream and the distinctive tang of tamarind.
Inspired by North African slow-cooking traditions, the recipe introduces tropical flavours that complement the natural sweetness of pumpkin. The result is a thick, golden sauce with a wonderful balance of savoury, sweet and gently sour notes.
It's also an excellent choice for preparing meals ahead of time, as the flavours develop beautifully after cooking.

Why This Pumpkin Stew Works

Roasting the pumpkin before adding it to the sauce is the secret to its rich flavour. The edges become golden and slightly caramelised, creating a deeper sweetness while helping the pieces retain their shape.
Full-fat coconut cream provides another important element. As it cooks slowly with the spices, it thickens and releases its natural oils, producing a rich, fragrant sauce.
Tamarind adds a pleasantly sharp note that balances the pumpkin and coconut. A little brown sugar rounds out the flavours, while cumin and coriander provide warmth.

Ingredients For Pumpkin Stew

Servings: 4–6
Preparation time: 15 minutes
Cooking time: 45 minutes
Difficulty: Easy
1kg butternut pumpkin, cut into 4cm pieces, skin left on
2 tablespoons olive oil
1 large onion, finely diced
1 teaspoon ground coriander
2 teaspoons ground cumin
½ teaspoon chilli powder (optional)
270ml full-fat coconut cream, preferably without thickeners
2 tablespoons tamarind paste
1 large tomato, chopped, or 200g crushed tomatoes
1 tablespoon brown sugar
2 teaspoons salt, or to taste
Freshly ground black pepper, to taste
Dried apricots and sliced green olives, to finish (optional)

How To Make Pumpkin Stew

Step 1: Roast the pumpkin.
Preheat the oven to 200°C, or 180°C fan. Line a large baking tray with parchment.
Toss the pumpkin with one tablespoon of olive oil, salt and pepper. Spread evenly and roast for 40–45 minutes, until tender with golden edges.
Step 2: Prepare the aromatic base.
While the pumpkin roasts, heat the remaining oil in a heavy-based saucepan over a medium heat.
Add the onion and cook for 8–10 minutes until golden. Stir in the coriander, cumin and chilli powder, then cook for another two minutes.
Step 3: Develop the coconut sauce.
Pour in the coconut cream and reduce the heat slightly.
Cook for 12–15 minutes, stirring occasionally, until the mixture thickens, its oils begin to separate and the edges turn golden.
Step 4: Add the tangy ingredients.
Stir in the tomato, tamarind paste and brown sugar.
If the sauce seems too thick, add approximately 80ml water.
Simmer for 10 minutes, adjusting the seasoning until the sweetness and acidity are balanced.
Step 5: Combine and serve.
Gently fold in the roasted pumpkin. Cover and simmer for five minutes, allowing the vegetables to absorb the sauce.
Fnishing with chopped dried apricots and green olives if desired.

Tips For Better Flavour

Use pure, full-fat coconut cream for the best texture. Lower-fat varieties may not thicken in the same way.
Add tamarind gradually, as its intensity varies between products.
Leftovers can be refrigerated in an airtight container for up to four days or frozen for up to three months. Reheat thoroughly, adding a splash of water if necessary.
This aromatic pumpkin stew offers an affordable, satisfying meal that tastes just as delicious the following day.
